Fajitas Grillées au Poulet, Légumes & Guacamole

Grilled Fajitas with Chicken, Vegetables & Guacamole

Ingredients:

  • Chicken breasts cut into strips
  • Colorful peppers in strips
  • Red onion in strips
  • Corn or wheat tortillas
  • Fajita Marinade (mixture of olive oil, lime juice, cumin, paprika, garlic powder, onion powder, salt and pepper)
  • Ripe avocados
  • Chopped tomatoes
  • Chopped red onion
  • Chopped fresh coriander
  • Lime juice
  • Salt and pepper

Instructions:

  1. Prepare the marinade by mixing all the ingredients in a bowl. Add the chicken strips to the marinade and let it sit for at least 30 minutes.
  2. Meanwhile, prepare the guacamole by mashing the avocados in a bowl. Add the tomatoes, red onion, cilantro, lime juice, salt, and pepper, and mix well. Refrigerate.
  3. Grill the marinated chicken strips on Coally until cooked through and lightly caramelized.
  4. Add the bell pepper and red onion strips to the grill and grill until tender and lightly browned.
  5. Meanwhile, heat the tortillas on the grill until warm and lightly toasted.
  6. Top warm tortillas with grilled chicken strips, grilled peppers and onions, and fresh guacamole.
