Grilled Fajitas with Chicken, Vegetables & Guacamole
Ingredients:
- Chicken breasts cut into strips
- Colorful peppers in strips
- Red onion in strips
- Corn or wheat tortillas
- Fajita Marinade (mixture of olive oil, lime juice, cumin, paprika, garlic powder, onion powder, salt and pepper)
- Ripe avocados
- Chopped tomatoes
- Chopped red onion
- Chopped fresh coriander
- Lime juice
- Salt and pepper
Instructions:
- Prepare the marinade by mixing all the ingredients in a bowl. Add the chicken strips to the marinade and let it sit for at least 30 minutes.
- Meanwhile, prepare the guacamole by mashing the avocados in a bowl. Add the tomatoes, red onion, cilantro, lime juice, salt, and pepper, and mix well. Refrigerate.
- Grill the marinated chicken strips on Coally until cooked through and lightly caramelized.
- Add the bell pepper and red onion strips to the grill and grill until tender and lightly browned.
- Meanwhile, heat the tortillas on the grill until warm and lightly toasted.
- Top warm tortillas with grilled chicken strips, grilled peppers and onions, and fresh guacamole.
