Grilled Vegetable & Feta Pitas with Yogurt Sauce
Ingredients:
- Pita bread
- Sliced colored peppers, zucchini, and red onions
- Crumbled feta
- Olive oil
- Salt and pepper
- Yogurt sauce (Greek yogurt, grated cucumber, chopped mint, salt, pepper, lemon juice)
Instructions:
- Prepare the yogurt sauce by mixing together Greek yogurt, grated cucumber, chopped mint, salt, pepper, and lemon juice. Refrigerate.
- Brush the sliced vegetables with olive oil and sprinkle with salt and pepper.
- Grill the vegetables on Coally until tender and lightly caramelized.
- Meanwhile, heat the pita breads on the Coally grill until hot and lightly browned.
- Top the toasted pita bread with the grilled vegetables, crumbled feta cheese and drizzle with the yogurt sauce.
